How does remote delivery work for a Barcelona business?

Usually through a payment provider that supports splitting at the point of capture, so money reaches vendors without passing through your own account in a way that changes your obligations. Which arrangement suits you is a commercial and regulatory question worth settling before the build rather than during it.
Is a marketplace harder than a normal store?
Considerably, and it is worth being clear about that before starting. Every ordinary feature acquires a per-vendor dimension, and the operational load of onboarding and supporting sellers is usually larger than the software. We would rather set that expectation than deliver a surprise.
