Selling perishable or dated stock well means the store knows how old each batch is and can act on it before the value has gone.
The mechanism is a markdown that steps rather than a single clearance at the end: a modest reduction with time still remaining sells to somebody who was going to buy anyway, while a heavy discount on the final week sells to a bargain hunter and signals that waiting works. Which of those you build is a pricing decision, and it should be a rule rather than a weekly judgement, because judgement is what produces the pallet nobody noticed. Two practical pieces support it. Stock has to be tracked by batch rather than as one number, so the store can sell the oldest first and knows what it is actually holding. And the date needs to be visible to the customer wherever it affects them — short-dated stock sold cheaply is an honest offer that a specific buyer is pleased to find, and the same stock sold quietly at full price is a complaint arriving next week.

Should short-dated stock be sold at full price?
Only if the customer knows. Somebody who receives a product with a fortnight left, having paid the same as for a fresh one, has a legitimate complaint and will make it publicly. The same stock offered cheaply with the date stated is a good deal that a particular kind of buyer is glad to find.
Why track stock by batch?
Because one number cannot tell you how old anything is. Batch tracking lets the store sell the oldest first and shows what is approaching its date while there is still time to act, which is the difference between a planned markdown and a write-off discovered during a stock count.
Should markdowns be a rule or a decision?
A rule. Weekly judgement is what produces the pallet nobody noticed until it was worthless, because the decision is easy to defer and there is always a reason to wait another week. A stepped rule acts on time rather than on somebody remembering.
