A page that is legible in daylight, operable with a keyboard and readable in an order that makes sense is simply a page that works, and treating that as an extra stage is how it never happens. How do you know a change is an improvement?
By measuring it where the volume supports measurement, and by reasoning honestly where it does not. Small stores rarely have the traffic for a reliable test, and pretending otherwise produces confident conclusions from noise. In that case the argument has to stand on its own merits.
