Putting the prices up without losing the customers
The customers who react badly to a price rise are rarely reacting to the number.
They are reacting to discovering it at the checkout, to finding that the thing they bought last month is suddenly different, or to a store that has changed what it charges while pretending nothing happened. Handling it well is mostly about sequence and notice. Regular customers should hear it before the site changes rather than from the basket. Anything already committed — a saved list, an open quote, a subscription — needs a stated position on whether it is honoured, and honouring it for a short window costs very little and buys a great deal. Where an increase is substantial, the honest move is saying why in a sentence rather than leaving people to invent a reason, which they will and it will be less flattering than yours. The construction to avoid entirely is a rise disguised as something else: a smaller quantity at the same price, or a delivery charge introduced in the same week, both of which customers work out and resent specifically.

Should we explain the increase?
A sentence, where the rise is substantial. Customers who are not told invent a reason, and the reason they invent is less flattering than the real one almost every time. A short, plain explanation without apology reads as a business that knows what it is doing rather than one hoping nobody notices.
What about orders already in progress?
Honour them for a stated window. A saved basket, an open quote or a subscription priced at the old rate costs very little to protect for a few weeks, and it removes the single most common complaint, which is not about the price but about the sense of having been caught out.
Is reducing the quantity a good alternative?
No. Customers notice, work out what happened and resent it more than the increase it replaced, because it reads as an attempt to deceive rather than a decision to charge more. The same applies to introducing a delivery charge in the same week as a price change.
