That is a genuine saving and it comes with a genuine concentration of risk: a plugin conflict takes every store down together, a bad release affects all of them, and the busiest brand's traffic is felt by the quietest. Separate installations invert both sides — failures stay local, and every improvement has to be applied several times by somebody who will eventually miss one. The deciding question is not technical but organisational. If one team runs all the brands and they should look and behave alike, sharing is usually right.
