What is actually worth logging?
Prices, stock adjustments, order edits, discount rules, user permissions and anything touching customer data. Those cover nearly every case where somebody later asks what happened. Logging every page view as well produces a volume nobody will read and buries the handful of entries that mattered.
Where should the log live?
Somewhere the people being logged cannot quietly edit. A record kept in the same place, under the same accounts, with the same permissions, proves very little in the situation you built it for. Writing it somewhere separate is a small amount of extra work and the entire point of having it.
Should the log be kept forever?
No, and deciding how long is a real question rather than a technicality. A permanent record of everything anybody has ever done is a data holding you would have to justify, so the retention period belongs with your adviser and the store's job is making sure it is actually enforced.
